Chow chow or chayote squash is one of the healthiest vegetables with few calories. We usually cook stew using this vegetable but we can also make healthy and delicious porridge. In this recipe I have enriched the poriyal by adding onion pepper and coconut. We can also do simple frying but adding onion and pepper gives the dish a better taste. This chow chow poriyal (fried pumpkin with coyote) goes well with any kuzhambu or rasam rice.
