Bitter gourds are eaten green and the vegetables have a distinct warty exterior and an oblong shape. Bitter gourds are generally consumed cooked in the green or early yellowing stage. The fruit is very bitter raw and can be soaked in cold water and drained to remove some of those strong flavours.
